Banana Pudding - 50's Style

Recipe Ingredients

  • 0.75 c Sugar
  • 3.00 tb Flour
  • 1.00 ds Of salt
  • 4.00 Eggs, divided
  • 2.00 c Milk
  • 0.50 ts Vanilla extract
  • Vanilla wafer cookies as
  • -needed.
  • 5.00 To 6 medium sized fully ripe
  • -bananas, peeled and sliced

Recipe Directions

  • Yields 8 servings Combine 1/2 cup sugar, flour and salt in top of a double boiler.

  • Mix in one whole egg and three egg yolks.

  • Stir in milk.

  • Cook uncovered over boiling water stirring constantly until thickened.

  • Remove from heat and add vanilla.

  • Spread a small amount on the bottom of a 1 1/2 quart casserole cover with layer of vanilla wafer cookies.

  • Top with a layer of sliced bananas.

  • Pour about 1/3 of custard over bananas.

  • Continue layering cookies, bananas and custard to make three layers, ending with custard.

  • Beat 3 remaining egg whites stiff but not dry.

  • Gradually add remaining 1/4 cup sugar and beat until mixture forms stiff peaks.

  • Pile on top of pudding, covering entire surface.

  • Bake in preheated 425 oven five minutes or until delicately browned.

  • Serve warm or chilled.
