Recipe Ingredients
- 0.75 c Sugar
- 3.00 tb Flour
- 1.00 ds Of salt
- 4.00 Eggs, divided
- 2.00 c Milk
- 0.50 ts Vanilla extract
- Vanilla wafer cookies as
- -needed.
- 5.00 To 6 medium sized fully ripe
- -bananas, peeled and sliced
Recipe Directions
- Yields 8 servings Combine 1/2 cup sugar, flour and salt in top of a double boiler.
- Mix in one whole egg and three egg yolks.
- Stir in milk.
- Cook uncovered over boiling water stirring constantly until thickened.
- Remove from heat and add vanilla.
- Spread a small amount on the bottom of a 1 1/2 quart casserole cover with layer of vanilla wafer cookies.
- Top with a layer of sliced bananas.
- Pour about 1/3 of custard over bananas.
- Continue layering cookies, bananas and custard to make three layers, ending with custard.
- Beat 3 remaining egg whites stiff but not dry.
- Gradually add remaining 1/4 cup sugar and beat until mixture forms stiff peaks.
- Pile on top of pudding, covering entire surface.
- Bake in preheated 425 oven five minutes or until delicately browned.
- Serve warm or chilled.
