Chinese Pasta Salad

Recipe Ingredients

  • 1.50 c Snow peas
  • 250.00 g Rice vermicelli
  • Red pepper sliced thin
  • 0.50 English cucumber sliced thin
  • 6.00 oz Cooked shrimp
  • 130.00 g Crabmeat
  • 1.00 tb Fine chopped fresh ginger
  • 1.00 Chopped garlic clove
  • 2.00 tb Sesame oil
  • 0.50 ts Black pepper
  • 1.50 ts Salt
  • 2.00 tb Lemon juice
  • 3.00 ts Vegetable oil
  • 1.00 ts Red wine vinegar

Recipe Directions

  • Wash and trim snwo peas.

  • Place them in a bowl and pour in enough boiling water to cover them.

  • Let stand 10 minutes; drain and set aside.

  • Cook the noodles in plenty of boiling water for 3 to 4 minutes.

  • Drain in colander, rinse with cold water and set aside.

  • In large bowl, combine noodles, snow peas, red pepper, cucumber, shrimp and crabmeat.

  • In a small bowl, combine ginger, garlic, sesame oil, pepper, salt, vegetable oil, lemon juice and vinegar.

  • Pour this dressing over the other ingredients and mix thoroughly.

  • Chill before serving.
