Fat Free Corn Bread

Recipe Ingredients

• 1 1/2 cup yellow cornmeal
• 1/2 cup white or whole wheat flour
• 1 tablespoon baking powder
• 1 egg or equivilent
• 1 cup nonfat milk or soy or rice milk
• 1 16 or 17 ounce can creamed corn
• 1/4 cup chopped onion
• A couple tablespoons chopped red pepper or pimento
• 1 small can ortega chilies (optional)
• 1 teaspoon chopped jalapeno chilies (optional)

Recipe Directions

• Mix dry ingredients.


• Mix wet ingredients


• Blend together


• Bake 425 degrees for 35 - 40 minutes in a 8 inch square pan
  or 15 - 20 minutes in muffin pans.
